Bake It


I love to bake, but don't really like to eat overly sweet things, so this recipe for Apple Loaf is perfect. It's great as a light dessert with tea, or even good for breakfast.


INGREDIENTS

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 cup chopped walnuts (optional)
1/2 cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
3-4 apples- peeled, cored and shredded

DIRECTIONS
1- Preheat oven to 350 degrees F (175 degrees C). Grease loaf pan.
2- Mix together flour, baking powder, soda, salt, spices and nuts.
3-In a large bowl, beat butter, sugar and 1 egg until smooth. Beat in second egg, and stir in vanilla. Stir in shredded apples. Pour flour mixture into batter; stir just until moistened. Spread into prepared pan.
4- Bake for 50 to 60 minutes*, or until an inserted toothpick comes out clean. Let stand 10 minutes, and then remove from pan. Place on a rack to cool.


*I always use my silicone pans for baking, so I need to cook it a little bit longer (65-70 mins).
